Ingredients

Cumin seeds

Cucumber

150 g, diced

Tomato

Red onion

1 small, finely chopped

Chilli, green or red

1 individual, deseeded and finely chopped

Coriander, fresh

5 g

Mint, Fresh

5 g

Lemon Juice, Fresh

Instructions

  1. Toast 1 teaspoon cumin seeds in a small pan over a medium heat for 1-2 minutes until fragrant. Immediately remove from the heat and set aside in a small bowl.
  2. In a large bowl, combine 150g diced cucumber, 3 diced tomatoes, 1⁄2 finely chopped red onion, 1 deseeded and finely chopped green chilli, 5g finely chopped fresh coriander, 5g finely chopped fresh mint and the juice of 1⁄2 lemon. Stir in the toasted cumin seeds and season to taste. Leave to stand for 10 minutes before serving.
