Banana, maple syrup & chocolate ice-cream sandwich

Homemade fruity ‘ice cream’ sandwiched between crunchy sweet biscuits.

Ingredients

Banana

60 g, frozen in chunks

Maple Syrup

2 teaspoon(s)

Dark chocolate chip oat biscuits

2 biscuit(s)

Raw cacao nibs

5 g

Instructions

  1. Put the frozen banana chunks in a mini food processor and blend unitl smooth and creamy.
  2. Add the maple syrup and process again until combined,. Using a spoon, pile the 'ice cream' onto the base of 1 of the biscuits.
  3. Sandwich with a second biscuit. Using a small knife, smooth the edges then roll one side in the cacao nibs and serve.

Notes

You can use any biscuit you like with these ‘ice-cream’ sandwiches –just remember to adjust the SmartPoints accordingly.
