2 medium, trimmed and roughly chopped

1 medium, grated rind of 1 small lemon

- Put the spring onions, garlic, chickpeas, soft cheese and lemon rind into a blender or food processor. Add salt and plenty of black pepper. Blend for 15-20 seconds, until smooth.
- Tip into a bowl, then serve, scattered with a few mint leaves.
