Spring Onions
2 medium
Garlic
1 clove(s)
Lemon
1 medium
Chickpeas, cooked
1 can(s), large, drained
Medium fat soft cheese
200 g
Salt
⅛ teaspoon(s)
Black pepper
⅛ teaspoon(s)
Mint, Fresh
3 sprig(s)
Instructions

Put the spring onions, garlic, chickpeas, soft cheese and lemon rind into a blender or food processor. Add salt and plenty of black pepper. Blend for 15-20 seconds, until smooth.

Tip into a bowl, then serve, scattered with a few mint leaves.
