Ingredients

Chickpeas, cooked

1 can(s), large, drained, drained and rinsed

Tahini paste (sesame paste)

40 g

Olive Oil

2 teaspoon(s)

0% fat natural Greek yogurt

100 g

Garlic

1 clove(s), crushed

Lemon Juice, Fresh

1 tablespoon(s)

Ground Cumin

¼ teaspoon(s), level

Chicory

80 g

Baby corn

80 g, halved

Red pepper

1 medium, deseeded and sliced

Carrots, raw

100 g, heritage

Instructions

  1. Put the chickpeas in a mini food processor with the tahini, olive oil, Greek yogurt, garlic and the lemon juice, then blitz to a coarse purée. Season to taste, then add 1 tablespoon cold water and blitz again.
  2. Transfer to a serving bowl and sprinkle over the cumin, then serve with the chicory leaves, baby corn, red pepper and carrots.
