Spoon this rich, creamy sauce over fish, poultry and meat, or vegetables such as broccoli, asparagus or cauliflower.

Ingredients

Egg yolk, raw

2 medium

Butter

40 g, melted

Lemon Juice, Fresh

2 teaspoon(s), fresh

Salt

¼ teaspoon(s), or to taste

Black pepper

¼ teaspoon(s), or to taste

Instructions

  1. In a small metal bowl, using a stainless steel whisk, whisk egg yolks and 2 tbsp water until completely blended and frothy.
  2. Place the bowl over a low heat; whisk constantly until thickened. Remove from heat and continue whisking to help cool a little.
  3. Slowly whisk in melted butter; whisk in remaining ingredients. Serve warm. Yields about 2 tablespoons of sauce per serving.
