This yummy vegeterian pasta dish is delicious hot or cold. Chopping the tomatoes and peppers very finely makes a great dressing for the pasta.

Ingredients

Wholewheat Pasta, dry

60 g

Garlic

1 clove(s), crushed

Cherry Tomatoes

125 g, chopped finely

Red pepper

50 g, roasted, chopped finely

Cucumber

40 g, 5cm (2 inches) chopped finely

Basil, fresh

1 tablespoon(s), finely chopped

Chives, Fresh

1 tablespoon(s), finely chopped

Parsley, fresh

1 tablespoon(s), finely chopped

Instructions

  1. Bring a saucepan of water to boil, add the pasta and cook according to packet instructions until al dente.
  2. Drain the pasta, reserving 1 tbsp of starchy pasta water. Put the pasta back in the saucepan, stir in all the remaining ingredients along with the reserved pasta water and serve.

Notes

To really allow the flavours to develop, you could keep this dish in the fridge overnight.
