1 large, sliced
Egg, whole, raw
8 medium, raw
30 g, chopped, mixed
- Heat the olive oil in a nonstick ovenproof frying pan. Cook the onion over a medium heat for 6-8 minutes until soft.
- Beat the eggs, season and stir in 2 tbsp chopped mixed herbs of your choice.
- Heat the grill to high. Pour the egg and herb mixture over the onion, stir gently to combine, then cook over a low heat for 8-10 minutes, or until almost set. Cook under the grill for 3-5 minutes until fully set, then serve.
