Herb & Gruyere cheese omelette

- Beat the eggs with a splash of water and season. Stir in the chopped herbs.
- Heat a frying pan and mist with cooking spray. Add the egg and draw it into the centre as it sets. Cook for 2-3 minutes or until almost set on top and golden underneath. Sprinkle over the grated Gruyere. Fold the omelette in half and slide onto a plate. Serve with fresh rocket.
