- Preheat the oven to 240°C, fan 220°C, gas mark 9 and place a rimless baking tray or pizza stone in the centre of the oven.
- In a small bowl, mix together the oil and garlic. Place a large piece of parchment paper on a flat surface and roll the dough out to a large circle. Pierce the dough all over with a fork, then brush all over with the garlic oil. Carefully slide the pizza on paper onto the preheated baking tray and cook for 4 minutes.
- Remove the base from the oven and top with the cheese and tomato slices. Bake for 8-10 minutes until the crust is browned and crisp and the cheese is melted. Transfer to a chopping board, season with black pepper, then cut into 8 slices to serve.
