For a visually striking pizza, find an assortment of tomatoes with varying colors and shapes. There are so many beautiful heirloom tomatoes available you can really make this your own.

Ingredients

Tomato

330 g, heirloom

Salt

1 pinch

Olive Oil

1 tablespoon(s)

Garlic

1 clove(s), crushed

Mozzarella

75 g

Vegetarian parmesan style hard cheese

2 tablespoon(s), grated

Black pepper

1 pinch

Basil, fresh

2 tablespoon(s)

Instructions

  1. Preheat the oven to 240°C, fan 220°C, gas mark 9 and place a rimless baking tray or pizza stone in the centre of the oven.
  2. In a small bowl, mix together the oil and garlic. Place a large piece of parchment paper on a flat surface and roll the dough out to a large circle. Pierce the dough all over with a fork, then brush all over with the garlic oil. Carefully slide the pizza on paper onto the preheated baking tray and cook for 4 minutes.
  3. Remove the base from the oven and top with the cheese and tomato slices. Bake for 8-10 minutes until the crust is browned and crisp and the cheese is melted. Transfer to a chopping board, season with black pepper, then cut into 8 slices to serve.

Notes

Nobody likes soggy pizza crust, and using fresh tomatoes can be problematic for that very reason. But we've got a trick for that. Start out by buying ripe but firm tomatoes. Salt the tomatoes first to draw out some of the moisture, then pat them dry before adding to the pizza.
