Sweet and vibrant peas, creamy potatoes and salty ham hock come together in this rustic salad, perfect for late summer

Ingredients

Peas, fresh or frozen

200 g, frozen

New potatoes, raw

700 g, halved

Olive Oil

1 tablespoon(s)

Wholegrain Mustard

2 tablespoon(s), level

Lemon Juice, Fresh

2 tablespoon(s)

Mint, Fresh

5 sprig(s), leaves, finely chopped

Tesco Finest Ham Hock

220 g, shredded

Pea shoots

80 g

Instructions

  1. Bring a large pan of water to the boil and add the peas. Cook for 2 minutes, then remove with a slotted spoon to a bowl of cold water. Add the new potatoes to the same pan and cook for 10 minutes or until tender. Drain and leave to cool slightly.
  2. Meanwhile, make the dressing. Whisk together the olive oil, mustard, lemon juice and chopped mint. Season to taste.
  3. Put the cooled potatoes in a large bowl. Drain the peas and add to the potatoes, along with the ham hock. Gently combine with the dressing. To serve, divide the pea shoots among 4 plates and top with the potato mixture plus the extra mint leaves.

Notes

Try replacing the ham hock with 300g tin tuna in spring water, drained.
