Ingredients

Fat free natural cottage cheese

50 g

Brown sandwich thins

1 individual

Egg, whole, raw

1 medium, raw

Tomato

2 large, sliced

Basil, fresh

1 leaf/leaves

Wafer thin ham

3 slice(s)

Black pepper

1 pinch

Instructions

  1. Fill a small saucepan with water and bring to the boil, then crack the egg into the water and cook at a very gentle simmer for 3 minutes or until cooked to your liking.
  2. Toast the sandwich thins, then spread with the cottage cheese and top with the sliced tomatoes, basil and ham.
  3. Lift the egg out of their poaching water with a draining spoon, and rest the spoon briefly on a wad of kitchen paper to absorb the excess liquid. Settle on top of the brunch thins, season with pepper and serve immediately.
