Ingredients

Salmon, raw

4 fillet(s), medium

Calorie controlled cooking spray

4 spray(s)

Olive Oil

1 teaspoons

Orange(s)

1 medium, peeled, segmented and chopped

Grapefruit

1½ medium, peeled, segmented and chopped

Coriander, fresh

2 tablespoons, chopped

Red onion(s)

1 medium, finely chopped

Green Jalapeños

1 portion(s), drained, chopped

Red pepper(s)

1 medium, deseeded and finely chopped

Instructions

  1. Heat the grill to high.
  2. Place the salmon fillets on the rack of a grill pan coated with cooking spray. Brush the fillets with the olive oil then season. Grill for 10-12 minutes, until the fish flakes easily when tested with a fork.
  3. While the fillets cook, in a medium bowl, combine the orange sections and the remaining ingredients to make the salsa. Serve the fillets with the salsa.
