Ready in just 20 minutes, these tasty griddled pork patties are served on a bed of garlic rice with gut-healthy kimchi on the side.

Ingredients

Extra lean pork mince (5% fat), raw

500 g

Reduced salt soy sauce

1½ tablespoon(s)

Dark soft brown sugar

1½ teaspoon(s)

Root Ginger

2 teaspoon(s), grated

Garlic

1 clove(s), grated

Calorie controlled cooking spray

Kimchi

120 g

Sesame Oil

2 teaspoon(s)

Garlic

Brown rice, boiled

300 g

Soy Sauce

1 tablespoon(s)

Spinach

200 g

Instructions

  1. In a medium bowl, combine the pork mince, soy sauce, the sugar, ginger and half the grated garlic. Divide the mixture into 4 equal portions and shape into patties about 10cm wide.
  2. Mist a nonstick griddle or frying pan with cooking spray and set over a medium heat. Cook the patties for 4-5 minutes on each side until cooked through.
  3. Meanwhile, make the garlic rice. Put the sesame oil in a large nonstick frying pan and set over a medium heat. Add the garlic and cook for 1 minute, then add the rice and soy sauce and cook for 2 minutes until heated through.
  4. Gradually add the spinach, stirring to wilt the leaves before adding more. Serve the rice with the patties and kimchi.
