Wow your guests with this simple-but-impressive platter of prawns, scallops and fish skewers, with a herb and yogurt dipping sauce

Ingredients

Fat Free Natural Yogurt

300 g

Dill, Fresh

2 tablespoon(s), chopped

Chives, Fresh

2 tablespoon(s), chopped

Lemon Juice, Fresh

Salmon, raw

Prawns, Raw

300 g, tails on

Scallops, Raw

Calorie controlled cooking spray

4 spray(s)

Chilli flakes

½ teaspoon(s), level

1 medium, cut into wedges

1 slice(s), cut into wedges

Instructions

  1. Combine the yogurt, dill, chives and lemon juice for the herby yogurt dip, season and set aside.
  2. Cut the salmon and white fish into 24 cubes each. Cut the lemon into quarters, then thinly slice crossways. Thread the cubed fish and lemon slices onto 8 skewers. Put the prawns and scallops on a plate and mist with cooking spray, then sprinkle over the chilli flakes.
  3. To cook the fish skewers, heat a large griddle pan over a high heat. Mist the skewers with cooking spray and season. Cook for 2-3 minutes on each side until golden and cooked through. Set aside and keep warm while you cook the remaining seafood.
  4. Put the prawns and scallops on the griddle and cook for 1-2 minutes on each side, then arrange them on a platter with the fish skewers and serve with the herby yogurt dip and lemon and lime wedges.

Notes

No griddle pan? Cook the fish under a hot grill (soak the skewers first), and the prawns and scallops in a frying pan.
