Griddled courgette with mint

1 medium, peeled into ribbons

Lemon Juice, Fresh
1 clove(s), crushed
1 tablespoon(s), shredded
- Peel the courgette into ribbons using a vegetable peeler, then mist with cooking spray. Cook on a large nonstick griddle pan over a high heat for 1-2 minutes on each side, or until just charred. Toss with the olive oil, freshly squeezed lemon juice, crushed garlic and shredded fresh mint. Set aside to cool, then serve.
