- Heat a large nonstick griddle pan over a medium heat. Mist the corn cobs with cooking spray. Griddle for 15-20 minutes, turning occasionally until tender and lightly charred all over.
- Meanwhile, combine the low-fat spread with the crushed garlic cloves and season well.
- Remove the cobs from the griddle and, while still hot, spread over the garlic mixture. Scatter over the grated parmesan and some chopped fresh flat-leaf parsley.
Raw garlic isn’t to everyone’s taste. Try mixing lime zest and juice into the spread instead, then scattering over coriander in place of parsley.
