Ingredients

Corn on the cob, raw

4 medium

Calorie controlled cooking spray

4 spray(s)

Low Fat Spread

40 g

Garlic

2 clove(s), crushed

Parmesan Cheese

2 tablespoons, grated, finely grated

Parsley, fresh

1 tablespoons, chopped

Instructions

  1. Heat a large nonstick griddle pan over a medium heat. Mist the corn cobs with cooking spray. Griddle for 15-20 minutes, turning occasionally until tender and lightly charred all over.
  2. Meanwhile, combine the low-fat spread with the crushed garlic cloves and season well.
  3. Remove the cobs from the griddle and, while still hot, spread over the garlic mixture. Scatter over the grated parmesan and some chopped fresh flat-leaf parsley.

Notes

Raw garlic isn’t to everyone’s taste. Try mixing lime zest and juice into the spread instead, then scattering over coriander in place of parsley.
