- Put 1kg Desirée potatoes in a large pan and cover with cold water. Bring to a boil then reduce the heat and simmer for 10-15 minutes until just tender. Drain, then set aside for 15 minutes to cool slightly. Preheat the oven to 220°C, fan 200°C, gas mark 7. Cut the potatoes into thick wedges and put on a large baking tray.
- Drizzle over 1 tbsp olive oil and 4 tbsp lemon juice. In a small bowl, combine 2 crushed garlic cloves, 1½ tbsp finely grated lemon zest, 35g fresh white breadcrumbs and a handful of chopped fresh flat-leaf parsley.
- Spoon the gremolata over the wedges then season and toss to coat. Roast for 1 hour 15 minutes until golden, then serve.
