Take your average chicken sandwich up a notch with crunchy salad and creamy dressing

Ingredients

Cabbage

30 g, red cabbage, shredded

Roasted red peppers in brine, drained

10 g, drained weight, 1⁄2 pepper, sliced

Spring Onions

1 medium, trimmed and finely sliced

Mint, Fresh

1 tablespoon(s)

Lemon Juice, Fresh

2 tablespoon(s), 1 tbsp for gyros, 1 tbsp for tzatziki

Wholemeal Pitta Bread

1 medium

Chicken breast, skinless, grilled

70 g, chopped

0% fat natural Greek yogurt

20 g

Cucumber

20 g, grated

Mint, Fresh

1 teaspoon(s), chopped

Instructions

  1. Make the tzatziki. Combine all the ingredients in a bowl, then season to taste and set aside.
  2. In a small bowl, toss together the cabbage, red pepper, spring onion, mint leaves and lemon juice, until combined.
  3. Lightly toast the pitta, then split. Fill with the mixed salad and chicken, then drizzle over the tzatziki.
