Greek chicken with tzatziki, orzo & peppers

150 g, sliced, mixed peppers
½ teaspoon(s), chopped, crushed
½ teaspoon(s), level
Olives, in Brine
6 individual, quartered
Chicken breast, skinless, grilled
1 individual, medium, sliced
- Bring a large pan of salted water to a boil. Add the orzo and cook for 8 minutes, until tender. Drain and toss the orzo with lemon zest and ½ tsp oil.
- Meanwhile, mist a small nonstick pan with cooking spray and set over a medium-high heat. Cook the peppers, garlic and oregano, for about 5 minutes, stirring occasionally until the peppers are tender. Stir in the olives.
- Spoon the tzatziki over the chicken and serve with the orzo and peppers.
