This is simply delicious - a lovely hot meringue pudding.



250 g, baking, peeled, cored and chopped

Grapes, Black or White

110 g, seedless, halved

Artificial sweetener

4 tablespoons

Egg, whole, raw

2 medium, raw, separated


  1. Preheat oven to 200°C, fan 180°C, gas mark 6.
  2. Cook the apples in a little water until tender – about 8 minutes. Mash with a potato masher to give a smooth puree, or use a stick blender.
  3. Stir the grapes and 2 tbsp of powdered sweetener into the apples. Taste the mixture, adding more sweetener if wished. Stir in the egg yolks. Share the mixture between 4 individual ovenproof dishes and stand them on a baking sheet. Bake for 5 minutes.
  4. Whisk the egg whites in a grease-free bowl until they hold their shape. Whisk in the remaining sweetener. Pile on top of the apple mixture and return to the oven for a further 4-5 minutes to brown the meringue.


Use one large dish if you don’t have individual dishes.
