Bring the taste of Italy to your table by teaming tuna, veg and gnocchi with a Mediterranean-style sauce.

Ingredients

Gnocchi, Fresh

500 g

Calorie controlled cooking spray

4 spray(s)

Onion

1 large, diced

Mushrooms

250 g, quartered

Tinned Tomatoes

1 can(s), large

Peas, frozen, boiled

250 g

Tuna in spring water, drained

1 can(s), large, drained

Vegetarian parmesan style hard cheese

4 tablespoon(s), grated, or Parmesan, grated

Instructions

  1. Preheat oven to 200°C, 180°C, gas mark 3. Cook the gnocchi to pack instructions, drain and then place in a 1.5 litre baking dish.
  2. Heat a frying pan over medium heat & mist cooking spray, add the onion and cook for 5 minutes until soft. Then add the mushrooms and cook for a further 5 minutes.
  3. Once soft add the chopped tomatoes and peas and reduce slightly. Add the tuna and season to taste.
  4. Pour the sauce over the gnocchi, sprinkle the grated cheese over the top then bake in the oven for 15 minutes.
