- Fry the chorizo in a large nonstick ovenproof frying pan over a medium-high heat for 4-5 minutes, or until crisp. Add the tomatoes and cook for 5 minutes, until just softened.
- Stir in the spinach and cook for 1-2 minutes, until wilted. Add the garlic and chilli flakes and cook for 1 minute, then remove from the heat and season to taste.
- Meanwhile, cook the gnocchi in a large pan of boiling water for 2-3 minutes, until tender. Drain well, then stir through the chorizo mixture. Heat the grill to high.
- Scatter the mozzarella over the gnocchi and chorizo mixture, then cook under the hot grill for 8-10 minutes, or until the cheese is melted and bubbling. Serve with the salad on the side.
