Turn the classic G&T into a jelly that’s perfect for a summer party


Ingredients
Fine Leaf Gelatine
5 sheet(s)
Caster Sugar
70 g
Gin
100 ml
Low Calorie Tonic Water
120 ml
Lemon Juice, Fresh
1 teaspoon(s), ½ juiced, ½ sliced
Lime
1 medium, ½ juiced, ½ sliced
Instructions

Put the gelatine in a bowl of cold water and set aside to soften. Put the sugar and 200ml water in a medium pan and stir over a medium-low heat until the sugar has dissolved. Increase the heat and simmer, without stirring, for 3 to 4 minutes, then set aside to cool for 5 minutes.

Squeeze the excess water from the gelatine leaves and add them to the syrup, stirring until completely dissolved.

Stir in the gin, tonic water, and lemon and lime juices, then pour into 8 small ramekins or glasses. Put a slice of lemon and lime in each, then chill for 3-4 hours until the jellies have set.
