1 teaspoons, 1/2 juiced, 1/2 sliced
1 medium, 1/2 juiced, 1/2 sliced
- Put the gelatine in a bowl of cold water and set aside to soften. Put the sugar and 200ml water in a medium pan and stir over a medium-low heat until the sugar has dissolved. Increase the heat and simmer, without stirring, for 3 to 4 minutes, then set aside to cool for 5 minutes.
- Squeeze the excess water from the gelatine leaves and add them to the syrup, stirring until completely dissolved.
- Stir in the gin, tonic water, and lemon and lime juices, then pour into 8 small ramekins or glasses. Put a slice of lemon and lime in each, then chill for 3-4 hours until the jellies have set.
