German hot dogs with sauerkraut & onions

1 small, sliced finely
Sauerkraut
50 g
Erdinger Weissbier
150 ml
Wholegrain Mustard
1 tablespoon(s), level
Bay leaf, dry
1 leaf/leaves
Frankfurter
4 individual, halved, or 8 small
Asda White Finger Roll
4 roll(s)
Tomato ketchup
4 teaspoon(s)
Smooth Mustard
4 teaspoon(s), level
Instructions

Mist a pan with cooking spray and add the onion. Fry over a low heat, stirring, for 10 minutes or until browned and softened (add a splash of water if it browns too quickly).

Stir in the sauerkraut, wheat beer, mustard and bay leaf and season. Simmer, stirring occasionally, for 5 minutes or until the beer has been absorbed. Discard the bay leaf.

Meanwhile, warm the frankfurters in a pan of just simmering water for 5 minutes. Split the finger rolls and divide the onion and sauerkraut between them. Drain the frankfurters and divide between the buns. Top with 1 tsp ketchup and mustard each and serve.
