Ingredients

Potatoes, Raw

600 g

Olive Oil

1 tablespoon(s)

Rosemary, Fresh

1 tablespoon(s), finely chopped

Garlic

2 clove(s), grated

Lemon

½ zest(s) of 1

Instructions

  1. Preheat the oven to 220°C, fan 200°C, gas mark 7. Line a baking tray with baking paper.
  2. Cut the potatoes into 1.5cm thick slices, then cut the slices into 1.5cm thick sticks. Spread the fries onto the prepared baking pan in a single layer. Mist with cooking spray and season with salt & pepper, bake for 40 minutes, turning every 10 minutes.
  3. Meanwhile, in a small bowl, combine the oil, rosemary, garlic, lemon zest and season with salt and pepper.
  4. After the fries have been in the oven for 40 minutes, remove from oven and sprinkle with the oil mixture; toss well. Bake for a further 5 minutes, until aromatic and browned. Transfer pan to a wire rack and cool for a few minutes; sprinkle fries with any herb mixture on the pan before serving.
