Crispy oven fries

- Preheat the oven to 220°C, fan 200°C, gas mark 7. Line a baking tray with baking paper.
- Cut the potatoes into 1.5cm thick slices, then cut the slices into 1.5cm thick sticks. Spread the fries onto the prepared baking pan in a single layer. Mist with cooking spray and season with salt & pepper, bake for 40 minutes, turning every 10 minutes.
- Meanwhile, in a small bowl, combine the oil, rosemary, garlic, lemon zest and season with salt and pepper.
- After the fries have been in the oven for 40 minutes, remove from oven and sprinkle with the oil mixture; toss well. Bake for a further 5 minutes, until aromatic and browned. Transfer pan to a wire rack and cool for a few minutes; sprinkle fries with any herb mixture on the pan before serving.
