Full English Frittata
Turkey Rasher, grilled

- Preheat the grill. Grill the turkey rashers for 1 minute on each side. At the same time, grill the tomato halves and mushrooms. Keep the grill switched on.
- Heat a medium non-stick frying pan and mist it with low fat cooking spray. Add the turkey rashers, tomatoes and mushrooms.
- Beat the eggs with the milk and pour into the pan. Season with salt and pepper. Cook over a medium heat to set the base of the omelette, then transfer to the grill for another few seconds to set the surface.
- Slide the omelette from the pan onto a warm plate and eat at once.
