Fruit salad with mint & lime

This medley of fresh fruit is flavoured with a zing yand refreshing combination of lime, vanilla and mint. You can use whatever fresh fruit you like.


Ingredients
Vanilla pod
1 individual, split and seeds scraped out
Lime Juice, Fresh
20 ml
Mint, Fresh
2 tablespoon(s), chopped
Blackberries
90 g
Blueberries
70 g
Strawberries
90 g, larger ones halved
Banana
2 medium, roughly chopped
Kiwi Fruit
2 medium, cut into chunks
Peach
1 medium, stone removed and flesh chopped
Instructions

In a small bowl, mix the vanilla seeds with the lime juice and chopped mint.

Put all the fruit in a bowl and pour over the mint dressing. Stir well, then chill in the fridge for 15 minutes to allow the flavours to develop. Spoon into glasses or little jars to serve.
