Fruit salad with mint & lime
1 individual, split and seeds scraped out
Lime Juice, Fresh
2 tablespoons, chopped
90 g, larger ones halved
2 medium, roughly chopped
2 medium, cut into chunks
1 medium, stone removed and flesh chopped
- In a small bowl, mix the vanilla seeds with the lime juice and chopped mint.
- Put all the fruit in a bowl and pour over the mint dressing. Stir well, then chill in the fridge for 15 minutes to allow the flavours to develop. Spoon into glasses or little jars to serve.
