Fruit salad with lime dressing
This fresh salad, packed with ripe, juicy soft fruits, dressed with a simple lime dressing and finished with toasted nuts and fresh mint, is as pleasing to look at as it is to eat.

300 g, hulled and quartered
400 g, halved
2 zest(s) of 1
Lime Juice, Fresh
4 teaspoon(s), level
2 tablespoon(s), chopped
- Toast the cashews in a dry frying pan over a medium heat for 2-3 minutes, until fragrant and golden. Remove from the heat and roughly chop.
- Put the strawberries, blueberries and cherries into a serving bowl. In a separate small bowl, mix together the lime zest and juice and agave syrup, then add to the fruit and toss to coat.
- Divide the dressed fruit salad between bowls, scatter over the toasted cashews and mint, then serve.
