Fruit salad with lime dressing

This fresh salad, packed with ripe, juicy soft fruits, dressed with a simple lime dressing and finished with toasted nuts and fresh mint, is as pleasing to look at as it is to eat.


Ingredients
Cashew Nuts
16 individual, unsalted
Strawberries
300 g, hulled and quartered
Blueberries
250 g
Cherries
400 g, halved
Lime
2 zest(s) of 1
Lime Juice, Fresh
4 tablespoon(s)
Agave Syrup
4 teaspoon(s), level
Mint, Fresh
2 tablespoon(s), chopped
Instructions

Toast the cashews in a dry frying pan over a medium heat for 2-3 minutes, until fragrant and golden. Remove from the heat and roughly chop.

Put the strawberries, blueberries and cherries into a serving bowl. In a separate small bowl, mix together the lime zest and juice and agave syrup, then add to the fruit and toss to coat.

Divide the dressed fruit salad between bowls, scatter over the toasted cashews and mint, then serve.
