Exotic fruits taste fantastic together, especially when drizzled with a taste-tingling citrus drench.

Ingredients

Mango

4 slice(s), medium, peeled and cut into chunks

Papaya (Paw-Paw)

1 medium, peeled, deseeded and cut into chunks

Kiwi Fruit

2 medium, peeled and cut into chunks

Pineapple

1 medium, peeled and cut into chunks

Rosemary, Fresh

3 sprig(s)

Passion Fruit

3 medium

Lemon

1 medium, (juice of)

Thread the chunks of mango, papaya, kiwi fruit and pineapple onto the kebab sticks. Push a few rosemary leaves between the pieces of fruit.

Put the rest of the rosemary into a small bowl and pour over 2 tablespoons of boiling water. Steep for 1-2 minutes, then strain into a small jug. Scoop the seeds and pulp from one of the passion fruits into the jug and add the lemon juice.

Serve the kebabs with the passion fruit mixture spooned over. Halve the remaining two passion fruits and serve one half with each portion. If fresh lemon balm grows in your garden, use it as an alternative to rosemary.
