Fried eggs & rocket jacket potatoes
150 g, halved
1 medium, finely chopped
White Wine Vinegar
Calorie controlled cooking spray
Egg, whole, raw
4 medium, raw
2 medium, thinly sliced
½ teaspoons, level
- Combine the rocket, cherry tomatoes, shallot and vinegar in a medium bowl. Season to taste and toss to coat the leaves well.
- Mist a large frying pan with cooking spray and fry the eggs for 3-4 minutes until the whites are crisp and the yolks still runny (or as desired). Set aside, cover and keep warm.
- Divide the salad between the four split jacket potatoes and then top with the fried eggs. Garnish with the spring onions and chilli flakes to serve.
