Ingredients

Rocket

50 g

Cherry Tomatoes

150 g, halved

Shallots

1 medium, finely chopped

White Wine Vinegar

1 teaspoons

Calorie controlled cooking spray

4 spray(s)

Egg, whole, raw

4 medium, raw

Baked potato(es)

4 medium

Spring Onions

2 medium, thinly sliced

Chilli flakes

½ teaspoons, level

Instructions

  1. Combine the rocket, cherry tomatoes, shallot and vinegar in a medium bowl. Season to taste and toss to coat the leaves well.
  2. Mist a large frying pan with cooking spray and fry the eggs for 3-4 minutes until the whites are crisp and the yolks still runny (or as desired). Set aside, cover and keep warm.
  3. Divide the salad between the four split jacket potatoes and then top with the fried eggs. Garnish with the spring onions and chilli flakes to serve.
