This colourful pasta with juicy tomatoes, fragrant basil and creamy goat’s cheese is the perfect summer stand-by

Ingredients

Wholewheat Pasta, dry

200 g

Peas, fresh or frozen

120 g

Edamame Beans, cooked

150 g

Tomato

500 g, chopped

Olive Oil

1 tablespoon(s)

Garlic

2 clove(s), crushed

Basil, fresh

20 g, plus extra for serving

Goat's Cheese

50 g, crumbled

Instructions

  1. Cook the pasta in a large saucepan of boiling water according to pack instructions. Add the peas and edamame beans during the last 4-5 minutes of cooking time. Drain well and return to the pan.
  2. Stir in the tomatoes, oil, garlic and basil. Season and toss to combine. Divide among 4 bowls, top with the goat’s cheese and extra basil leaves to serve.

Notes

To make this vegan, replace the goat's cheese with a dairy-free cheese alternative.
