French toast with Black Forest compote

For a lighter take on classic French toast, swap traditional bread for sandwich thins – they’re just as tasty. This is the perfect dish for a relaxed weekend breakfast or brunch with friends and family


Ingredients
Frozen Mixed Berries
300 g
Honey
1 tablespoon(s), level
Egg, whole, raw
2 large, raw
Skimmed Milk
50 ml
Vanilla Extract

Calorie controlled cooking spray

White sandwich thins

0% fat natural Greek yogurt

Instructions

Put 300g frozen Black Forest fruits in a pan with 2 tablespoons water and 1 tablespoon clear honey. Simmer for 3-4 minutes until the fruit is thawed. Remove from the heat and set aside.

Break 2 large eggs into a shallow bowl. Add 50ml skimmed milk, 1 teaspoon vanilla extract and ½ teaspoon ground cinnamon and lightly beat with a fork.

Mist a large pan with calorie controlled cooking spray and set over a medium heat. Dip 2 white sandwich thins into the egg mixture and allow to soak for a minute.

Transfer the sandwich thins to the pan and cook for 2-3 minutes. Flip and cook for a further 2 minutes until golden. Repeat with 6 more sandwich thins, soaking one batch while another batch is cooking.

Serve 2 sandwich thins per person, with the compote and 1 tablespoon 0% fat natural Greek yogurt spooned over and ground cinnamon sprinkled over the top.
