Easy to make, good for you, low in Points and oh so versatile. This omelette packs a delicious protein punch and is great at lunch, breakfast or supper.

Ingredients

Egg, whole, raw

2 medium, raw

Light feta cheese

35 g

Green pepper

½ medium

Spinach

½ portion(s)

Spring Onions

1 medium

Mushrooms

½ portion(s), small

Calorie controlled cooking spray

Instructions

  1. Preheat the grill to high. Whisk the eggs with seasoning and set aside.
  2. Place a nonstick frying pan over a medium heat, and mist with cooking spray, add in the mushrooms, spring onions and peppers and cook 5-6 minutes until soft. Add in the spinach and feta, and cook for another 1 - 2 minutes.
  3. Once cooked, pour in the eggs, swirl to cover the pan and cook on a medium heat. Tip the pan from side to side to allow the uncooked egg to run over the edges of the cooked egg. Cook until almost completely set, then take off the heat and finish under the grill.
