Ingredients
Sweet potato, raw
100 g
Calorie controlled cooking spray
4 spray(s)
Egg, whole, raw
2 medium, raw
Salad leaves

Tomato
2 small, sliced
Cucumber
1 serving(s), , sliced
0% fat natural Greek yogurt
1 tablespoon(s)
Fat Free Salad Dressing
1 tablespoon(s), herby dressing
Instructions

Preheat the oven to 200°C, fan 180°C, gas mark 6.

Cut the sweet potato into 8 wedges lengthwise and place on a nonstick baking tray. Spray with cooking spray and season with salt and pepper. Roast in the oven for 30 minutes or until golden brown and tender.

Mist a large frying pan with cooking spray and fry the eggs for 3-4 minutes until the whites are crisp and the yolks still runny (or as desired).

Serve the eggs with the wedges and a salad of mixed greens, tomato and cucumber drizzled with yogurt mixed with the herb sauce. Season to taste and serve immediately.
