Line muffin tins with roast ham, break in some eggs, then bake for a cracking treat.


Olive Oil

1 teaspoons

Prepacked ham

8 slice(s), thin , or boiled ham (225g)

Egg, whole, raw

4 medium, raw, British Lion

WW Sliced White Danish Bread

4 slice(s), for bread soldiers, or Weight Watchers thick slice


  1. Preheat the oven to Gas Mark 6/200°C/400°F/ fan oven 180°C.
  2. Grease 4 ramekins or individual ovenproof dishes with the olive oil. Line each of these with 2 slices of ham, so that there are no gaps.
  3. Carefully crack an egg into each dish. Season with a little salt and pepper. Transfer to the oven and bake for 8-12 minutes, depending on how well you like your eggs cooked.
  4. Serve with the bread or toast, cut into soldiers.


For a vegetarian version, bake the eggs in hollowed-out beef tomatoes.
