Line muffin tins with roast ham, break in some eggs, then bake for a cracking treat.

- Preheat the oven to Gas Mark 6/200°C/400°F/ fan oven 180°C.
- Grease 4 ramekins or individual ovenproof dishes with the olive oil. Line each of these with 2 slices of ham, so that there are no gaps.
- Carefully crack an egg into each dish. Season with a little salt and pepper. Transfer to the oven and bake for 8-12 minutes, depending on how well you like your eggs cooked.
- Serve with the bread or toast, cut into soldiers.
For a vegetarian version, bake the eggs in hollowed-out beef tomatoes.
