- Heat the oil in a medium nonstick frying pan and stir-fry the garlic and chilli flakes over a medium heat for 1-2 minutes.
- Add the courgette and cherry tomatoes, then season and cook, stirring, for 2-3 minutes.
- Make a well in the centre of the courgette mixture and crack the egg into it. Cook for 3-4 minutes, until the egg white is set and the yolk is soft.
- Carefully slide onto a plate, crumble over the feta and serve topped with the basil.
