Pop these out of the muffin tin for a different way of serving eggs and bacon.

Ingredients

Calorie controlled cooking spray

8 spray(s)

Wholemeal bread, sliced

8 slice(s), medium, crusts removed and each slice cut into four triangles

Egg, whole, raw

8 medium, raw

Back bacon, raw

2 rasher(s), medium, chopped

Instructions

  1. Preheat the oven to 180°, fan 160°C, Gas Mark 4. Spray eight holes of a muffin tin with cooking spray.
  2. Arrange four bread triangles in each hole, pressing down to cover the bottom and sides with the points sticking out. Crack an egg into the middle of each and divide the chopped bacon between the holes, scattering over each egg.
  3. Bake for 15 minutes until golden and the egg white is set. Season with freshly ground black pepper and serve.

Notes

For a vegetarian option, use the same amount of Quorn Deli Bacon Style Rashers, instead of the bacon.
