Ingredients

Salad leaves

Spring Onions

2 medium, finely sliced

Peppers, all types

2 medium, deseeded and sliced

Cucumber

100 g, sliced

Cherry Tomatoes

100 g, halved

Balsamic vinegar

6 teaspoon(s)

Edamame & pea salad with oil

65 g

Light feta cheese

25 g, crumbled

Instructions

  1. In a bowl, toss together the salad leaves, spring onions, peppers, cucumber and cherry tomatoes. Drizzle over the balsamic vinegar.
  2. Gently stir in the edamame salad and feta. Season with salt and freshly ground black pepper, then serve.
