A mix of protein-rich tuna and crunchy veg needs nothing more than a splash of vinegar and some seasoning to make the flavours sing.

Ingredients

Lettuce

1 individual, baby cos lettuce, leaves torn

Cherry Tomatoes

300 g, halved

Cucumber

1 individual, trimmed and spiralised

Red pepper(s)

1 medium, thinly sliced

Carrots, raw

2 medium, trimmed and spiralised

Radish

4 medium, thinly sliced

Tuna in spring water, drained

2 can(s), medium, drained, flaked

Balsamic vinegar

4 teaspoons, white

Instructions

  1. Combine the lettuce, tomatoes, cucumber, pepper, carrot, radishes and tuna in a large bowl.
  2. Add the vinegar, season to taste and toss to combine.
  3. Divide between bowls and serve.
