This classic salad makes excellent use of leftover chicken, hard boiled egg and bacon. Though the recipe makes one serving, you can easily multiply the ingredients for a batch of meal-prepped lunches to get you through the week.


Ingredients
Hard boiled egg

Calorie controlled cooking spray
4 spray(s)
Bacon medallions, raw
2 rasher(s), cooked
Lettuce
½ individual, baby cos lettuce
Cherry Tomatoes
50 g, baby plum tomatoes, chopped
Avocado
¼ medium, halved, stoned and cut into bitesized pieces
Stilton
15 g
Chicken breast, skinless, grilled
100 g
Blue cheese salad dressing

Instructions

Arrange the lettuce in a shallow bowl, top with the tomatoes, hard boiled egg, cooked bacon, avocado and crumble over the blue cheese. Add the blue cheese dressing and toss to coat.
