A popular dish in America, this easy chicken and bacon salad is a great choice for a quick lunch.

Ingredients

Hard boiled egg(s)

4 medium

Calorie controlled cooking spray

4 spray(s)

Bacon medallions, raw

5 rasher(s)

Lettuce

2 individual, baby cos lettuce

Cherry Tomatoes

200 g, baby plum tomatoes, chopped

Avocado pear

1 medium, halved, stoned and cut into bitesized pieces

Chicken breast, skinless, grilled

300 g

Fat Free Salad Dressing

80 ml

Instructions

  1. Boil the eggs in a pan of boiling water for 5 minutes. Drain and cool under running cold water, then peel and cut in half. This can be done ahead of time, if you like.
  2. Mist a frying pan with cooking spray and put over a medium-high heat. Add the bacon and cook for 5 minutes, stirring, or until browned.
  3. Arrange the bacon, lettuce, tomatoes, avocado, chicken and eggs in serving bowls; drizzle with the dressing and serve.

Notes
