Ingredients
White pasta, dry

Olive Oil
½ tablespoon(s)
Onion
1 medium, thinly sliced
Garlic
4 clove(s), crushed
Gin
1 measure
Olives, in Brine
16 individual, stuffed with pimento - plus 2 tbsps of olive brine
Courgette
1 medium, spiralised
Parsley, fresh
1 tablespoon(s)

Cook the linguine in boiling water for 10 minutes, until al dente.

Meanwhile, heat the oil in a large frying pan over a medium heat. Add the onion and garlic; cook for 3-5 minutes, until golden brown, stirring frequently. Carefully add the gin, scraping the bottom of the pan to release any browned bits. Cook for 1 minute until most of the liquid evaporates. Stir in the olive juice, olives, linguine, and courgette, cook for 2 minutes, until the courgette is warmed and softens slightly. Stir in the parsley and season.
