Ingredients

Egg, whole, raw

4 medium, raw

Reduced Fat Mayonnaise

2 tablespoon(s)

Mustard Powder

¼ teaspoon(s), level

White Wine Vinegar

1 teaspoon(s)

Salt

1 pinch, and white pepper

Paprika

teaspoon(s), level, ground, for sprinkling

Instructions

  1. Hard boil the eggs in simmering water for 12 minutes. Plunge into cold water and leave to cool. Shell the eggs and slice them in half lengthways.
  2. Carefully remove the egg yolks, put them into a bowl and mash with a fork. Add the mayonnaise, mustard powder, vinegar and seasoning. Mix thoroughly. Spoon or pipe the mixture back into the egg whites, then sprinkle with a little paprika.
  3. For the Chive and Soft Cheese Stuffed Eggs: remove the cooked egg yolks, put them into a bowl and mash with a fork. Add the low fat soft cheese, herbs or spring onion and seasoning. Mix thoroughly. Spoon the mixture back into the egg whites, then garnish with chives.
  4. For the Smoked Salmon and Cucumber Stuffed Eggs: remove the cooked egg yolks, put them into a bowl and mash with a fork. Add the low fat soft cheese, smoked salmon, cucumber, herbs and seasoning. Mix thoroughly. Spoon the mixture back into the egg whites, then garnish with dill or parsley.
