Deli pasta salad
White pasta, dry
100 g, bows or spirals
100 g, fine, sliced
1 individual, Romaine or cos, roughly shredded
1 small, red, thinly sliced
16 individual, halved
Olives, in Brine
12 individual, black or green
Sainsbury's Italian Milano Salami
80 g, thinly sliced
20 g, shavings
4 leaf/leaves, to garnish
Lemon Juice, Fresh
½ teaspoons, heaped, or wholegrain mustard
1 pinch, and black pepper, freshly ground
- Cook the pasta in plenty of boiling, lightly salted water for 10-12 minutes until just tender, or cook according to pack instructions. At the same time, simmer the green beans in boiling water for 3-4 minutes, then drain them and cool them with cold, running water. Drain and rinse the pasta with cold water.
- In a large bowl, mix together the pasta, beans, lettuce, red onion, tomatoes and olives. Share between 4 bowls or plates, then arrange an equal amount of salami on top of each salad. Share the Parmesan cheese and basil leaves between them.
- To make the dressing, whisk together the olive oil, lemon juice, mustard and seasoning. Sprinkle over the salads and serve.
