This tasty mediterranean salad is perfect for a light lunch or meal – it's simple to assemble, yet has plenty of flavour and won't throw your weight loss off track.


Ingredients
White pasta, dry
100 g, bows or spirals
Green Beans
100 g, fine, sliced
Lettuce
1 individual, Romaine or cos, roughly shredded
Onion
1 small, red, thinly sliced
Cherry Tomatoes
16 individual, halved
Olives, in Brine
12 individual, black or green
Sainsbury's Italian Milano Salami
80 g, thinly sliced
Parmesan Cheese
20 g, shavings
Basil, fresh
4 leaf/leaves, to garnish
Olive Oil
1 tablespoon(s)
Lemon Juice, Fresh
2 tablespoon(s)
Dijon Mustard
½ teaspoon(s), heaped, or wholegrain mustard
Salt
1 pinch, and black pepper, freshly ground

Cook the pasta in plenty of boiling, lightly salted water for 10-12 minutes until just tender, or cook according to pack instructions. At the same time, simmer the green beans in boiling water for 3-4 minutes, then drain them and cool them with cold, running water. Drain and rinse the pasta with cold water.

In a large bowl, mix together the pasta, beans, lettuce, red onion, tomatoes and olives. Share between 4 bowls or plates, then arrange an equal amount of salami on top of each salad. Share the Parmesan cheese and basil leaves between them.

To make the dressing, whisk together the olive oil, lemon juice, mustard and seasoning. Sprinkle over the salads and serve.
