Our spiced-up version of the classic rum-and-ginger cocktail will leave you cold when it stares right back at you!
Lychees in Syrup
Sugar Free Ginger Beer
Lime Juice, Fresh
- Peel the lychees and carefully push a glacé cherry into each one. Once the lychee splits to reveal the cherry, secure it in place with a toothpick.
- Fill 6 highball glasses with ice cubes and pour 30ml dark rum into each glass.
- Top each with 125ml light ginger beer and 1 tbsp lime juice.
- Stir gently and serve decorated with the skewered lychee ‘eyeballs’.
