- Preheat the oven to 200°C, fan oven 180°C, Gas Mark 6.
- Remove any visible fat from the lamb cutlets, then dip them into the beaten egg white.
- Mix together the breadcrumbs, herbs and seasoning on a plate and dip the lamb cutlets in this mixture, pressing down well to coat them. Arrange on a baking sheet. Transfer to the oven and bake for 15-20 minutes, depending on how well cooked you like them. Serve with salad or vegetables.
