Crushed Lemon Meringue Layer
Medium fat soft cheese
0% fat natural Greek yogurt
1 medium, finely grated rind and juice
2 tablespoons, powdered
2 individual, roughly crushed
5 slice(s), and a few mint leaves to decorate
- Beat the low fat soft cheese and yogurt together until smooth. Add the lemon rind and juice, stirring to mix. Stir in the powdered sweetener, adding more to suit your taste, if necessary.
- Layer the crushed meringues and the lemon mixture in small glasses. Chill until ready to serve, decorated with lemon slices and mint leaves. Cook’s Tip: Use low fat plain yogurt instead of the Greek yogurt, if you prefer.
