A crunchy zesty light dessert that is quick and easy, and tastes divine.

Ingredients

Medium fat soft cheese

300 g

0% fat natural Greek yogurt

150 g

Lemon

1 medium, finely grated rind and juice

Artificial sweetener

2 tablespoon(s), powdered

Meringue Nests

2 individual, roughly crushed

Lemon

5 slice(s), and a few mint leaves to decorate

Instructions

  1. Beat the low fat soft cheese and yogurt together until smooth. Add the lemon rind and juice, stirring to mix. Stir in the powdered sweetener, adding more to suit your taste, if necessary.
  2. Layer the crushed meringues and the lemon mixture in small glasses. Chill until ready to serve, decorated with lemon slices and mint leaves. Cook’s Tip: Use low fat plain yogurt instead of the Greek yogurt, if you prefer.
