Ingredients

Light feta cheese

30 g

Egg, whole, raw

1 medium, raw

Tortilla wrap

1 medium

Rocket

20 g

Cherry Tomatoes

50 g, halved

Sriracha sauce

1 teaspoon(s), optional

Instructions

  1. Heat a small nonstick frying pan over a medium heat. Sprinkle the cheese into the pan in a ring about 4 inches in diameter. When the cheese starts to melt, crack the egg into the centre of the ring. Season with salt & pepper.
  2. Cook for 1 minute, until the whites begin to set. Cover the pan and cook for 2-4 minutes, until the white is set and the yolk is cooked to your liking. If the cheese starts to get too brown, remove the pan from the heat and keep it covered until the egg is done.
  3. Using a thin spatula, gently lift the egg from the frying pan and place it on the tortilla. Top with the rocket, tomatoes, and hot sauce, if desired.
