Creole tomato salad
450 g, sliced into rounds
1 large, thinly sliced into rounds
60 g, thinly sliced into rounds
1 teaspoons, level
Light Brown Sugar
1 clove(s), grated
¼ teaspoons, level
1 tablespoons, to garnish
- Scatter the rocket onto a platter and then arrange the sliced tomatoes, onions and mozzarella on top. Season with a large pinch of salt and black pepper.
- In a small bowl, whisk together the vinegar, mustard, sugar, garlic and dried tarragon. Drizzle the dressing over the salad and garnish with the fresh basil.
