Creamy chicken with sautéed potatoes & apple

Ingredients
Potatoes, Raw
200 g, peeled and diced
Olive Oil
1 teaspoon(s)
Chicken breast, skinless, raw
330 g, sliced
Apple
1 medium, sliced
Rosemary, Fresh
5 g, leaves picked and chopped
Cabbage
2 portion(s), large, wedges
Half Fat Crème Frâiche
4 tablespoon(s), level
Instructions

Boil a pan of water, add the potatoes, bring back to the boil and simmer for 10 minutes or until tender. Drain well.

While the potatoes are cooking, heat the oil in a frying pan, add the chicken slices and cook for 5–7 minutes until golden. Remove and set aside. Add the apple and potato to the pan and stir fry for 3–4 minutes, adding the rosemary towards the end. Set aside and keep warm. Steam the cabbage wedges in a separate pan.

Warm the crème fraîche in the frying pan, put the chicken back in and season with some salt and pepper. Divide the chicken between 2 plates and serve with the sautéed potatoes and apple, and the steamed cabbage.
